To enable the student to learn food and beverage terms and apply them in the field of gastronomy.

Endüstriyel mutfaklarda kullanılan araçlar ve özelliklerini, terimler ve içerikleri bilir. Otel mutfaklarına özgü mutfak araçlarını bilir. Otel mutfağı terimleri ve içerikleri bilir. Pişirme Ekipmanlarını kavrar. Doğrama ekipmanlarını tanır. Sürdürülebilir mutfak ve sürdürülebilir yiyecek içecekleri çevreyi koruyarak kullanmanın farkına varır.
