Course Objective
To give knowledge on the composition of milk, the machinery and equipment and their principles used in dairy industry and the process flow charts.
Brief Content of the Course
The chemistry of milk, microorganism and enzymes of milk, collections and reception of milk, general milk treatment, fluid milk products, pasteurization, sterilization, manufacture of starter cultures, membrane processes of various milk products, yoghurt, cheese and butter processing technology.
