The objective of the course is to give information about the general characteristics of the additives used in food production, their toxicology and their uses and purposes in food industry

Definition, classification and toxicology of food additives and related legislation, antioxidants, emulsifiers, gums, microbial preservatives, acidity regulators, chelating agents, sweeteners, agglomeration inhibitors, flavors, flavor enhancers, colorings, flour treatment agents and other additives
