Course Objective
The aim of the course is to provide basic information about food chemistry, nutritional technologies, mass nutrition, hygiene and environmental health, nutritional elements, and composition of foods, and to enable students to use this information to learn the principles of adequate and balanced nutrition and to apply them in the kitchen.
Brief Content of the Course
Food chemistry; Nutritional value of foods; Balanced diet; Possible alternative solutions to nutritional problems, Nutrition technologies, Food in mass feeding institutions, Hygiene and environmental health, General principles of human nutrition, Dry nutrition health. Types, amounts, properties and functions of essential nutrients in nutrition; Composition of nutrients, physical and chemical properties; Common nutritional problems and solutions; Nutrition in diseases. Separation of food items according to nutritional value.
